You will require
Tur dal (also known as toovar dal): 1 measure (ideally a cup) Ginger: ½ Garlic: 2-3 cloves Green Chilies: 3-4 nos Onion: 1 nos, finely chopped Buttermilk or curds: 4 cups Roasted coriander powder: 1 tsp | Roasted cumin powder: 1 tsp Chana dal (roasted if desired): 1 tsp Fenugreek seeds: Ό tsp Turmeric powder: ½ tsp Oil: 2 tbsp Mustard seeds: ½ tsp A bunch of curry leaves A bit of desiccated coconut for garnishing (optional) | How to proceed Wash and grind tur dal to a coarse paste along with onion, ginger-garlic and chilies. Sprinkle salt on the batter and set aside. Now roll out small koftas (balls) from the batter and steam for about 20 minutes. Set aside to cool. Mix chana dal in buttermilk and let it simmer on low heat. Add spices (ground coriander, Cumin, fenugreek, turmeric and coconut) and let the kadhi simmer till it thickens. Add remaining bit of ginger, chilies and salt (as per taste) and allow the kadhi to cook. Keep stirring continuously till the kadhi comes to a boil. Add koftas to the kadhi and continue stirring. Heat oil in a large kadhai, add mustard seeds and curry leaves and gently pour over the simmering kofta kadhi. Voila! You have whipped up some mouthwatering delicacy. |

Remove from fire, cool and grind to a smooth paste. Heat butter in a 'Kadai', fry chopped onions, add ginger and the ground palak with milk, salt, chilli powder, mango powder, turmeric and garam masala. Mix well and boil the gravy till it becomes thick. Add Koftas. Garnish with coriander leaves and serve hot. |
