Fish - ½ kg (approx), a small cleaned octopus, cut into one-inch pieces Onions - 3 (medium size) juliennes Ginger - ½ (thinly sliced) Garlic cloves - 2 large (finely chopped)
Green pepper - 1nos (large) deseeded and cut lengthwise into long thin strips Black mustard seed - 1 tsp Powdered turmeric - 1 tsp Cooking oil (not olive oil) - 3 tablespoons White/red wine or cider vinegar - 2 tablespoons
How To Proceed 1. Heat oil and fry fish (octopus) till half cooked. Remove from heat and keep warm. Fry onions in the remaining oil and fry for a few minutes. 2. Add ginger, garlic, mustard seeds, turmeric and vinegar and continue cooking. 3. Add salt. 4. Cook for some more time. 5. Add green pepper and allow the sauce to simmer. Slide cooked fish into the sauce and blend gently. 6. The fish can be served hot with a small portion of salad and crusty bread or served cold the next day .
Hard shell crabs - 12 nos (retain all parts but scoop out insides) Crab meat - 1 kg Flour - 1 measure Milk - 1 cup Celery seeds - 1tbsp
Parsley - 1 tbsp Egg - 1 nos Seasoning as per liking Salt for taste Oils for deep frying
Method Make a batter of all ingredients except crabs, crab meat, and vegetable oil. Add a table spoon of oil to the batter and knead well. Stuff crab cervices with crab meat and dip into batter. Heat oil in a large kadai or wok and proceed to deep fry the stuffed crabs. Fry crabs till golden brown.
Crab meat: 1 kg Butter: 3 tbsp Flour: 1 tbsp Milk: ½ cup Onion: 1 nos finely chopped Worcestershire sauce: 1 1/2 teaspoons
Bread (minus the crust) cut in squares: 2 nos Mayonnaise: ½ cup Lemon juice: 1 tbsp Paprika: to sprinkle Salt and pepper as per taste
Method Heat the butter (1 tbsp) in a pan and slowly blend in the flour. Gradually add the milk and stir continuously to maintain an even consistency and avoid lumps. Cook the mix till it simmers and thickens. Now add the sauce, onion and bread, stir and remove from heat.
Allow the mix to cool and fold in the mayonnaise, lemon, salt and pepper.
Now heat the remaining butter and toss in the crab meat till it is half done. Now add in the cooled sauce and sprinkle paprika. Bake the crab dish till the top turns light brown. Serve hot.
