Method Combine 1 egg 1 tsp salt 1 tsp mustard and ½ tsp pepper in a liquidizer and switch on the machine for a few seconds
Blend in 1 cup oil gradually. The mayonnaise will thicker within a minute. Add 1 tsp lemon juice.
Note Adjust the seasoning according to the dish for which the mayonnaise is required. Home-made mayonnaise is infinitely tastier than any of the commercially made ones. If stored in an airtight jar in the refrigerator, it will keep for several weeks. For additional flavour, add cream and chopped olives or gherkins to the mayonnaise. However, this is only to be done at serving time.
Whipped Cream
A favourite desert topping. Use heavy cream and whip it as close to serving time as possible. To achieve greatest volume, chill the cream, beaters and bowl thoroughly. Whip the cream until it begins to stiffen. Then slowly beat in 2 to 4 tablespoons of castor sugar per cup of cream. If desired, add ½ teaspoon vanilla and Ό teaspoon other flavour.
Sesame chutney (Til ka chutney) -{for app 5-6 people}
Ingredients
50 gm sesame 1 tsp cumin ½ tsp coriander seeds A few curry leaves 1 tsp urad daal 6 dry chillies One katori (bowl)-grated dry coconut And a small lump of tamarind and jaggery.
Method All the ingredients are fried in coconut oil or ghee and ground into chutney using as little water as possible. To the thick chutney is added a tbsp of heated oil with asafoetida. This chutney goes well with chapattis, bread, dosas etc. It can be served with hot rice too.
Onion Chutney
Unusual and delicious, have the onion chutney with rice, chapatti, bread or just any Savoury: Red onion - 2 small sized - Sliced Red Chilli - 2 / 3 Nos Salt - 1/4 teaspoon or to taste Tamarind - 1/2 the marble size Oil - 1 teaspoon
Method 1. Take a small kadai or Wok. Add the oil and heat. 2. Add the onion and slightly fry - do not brown. Stir well and remove from fire. 3. Add the chillies and tamarind to onion and grind it in mixture - grinder. If needed add 1 or 2 teaspoon water to get a fine paste. 4. Now your Chutney is ready.
Dippy Dee Dippy Doo, Dip Yum, Yum!
Chips are passι and so are greasy samosas. Parties and social dos are more a forum for eating right and healthy food than indulging in fleeting, gastronomic delights. Here is one such, healthy, low cal snack which is tasty and non-fattening:
Spring onion (with leaves) - 2 bunches Garlic - 2 cloves Celery (optional) - 2 stalks Hung curds - 1 cup Salt and pepper as per taste Cucumber - 4 nos (skinned and sliced) Carrot - 4 nos (skinned and sliced) Beet - 4 nos (skinned and sliced) Method Blend onion, garlic and celery to a paste. Add to curds, mix well and temper with salt and pepper. Chill this dip and scoop it out with strips of cucumber carrot and beet. This snack is easy on the stomach and very tasty.
