Cheese and Green Pepper Toasts with Mayonnaise topping
Want to skip a heavy meal in summer. Try this filling, yet light sandwich just right for a summer brunch.
Ingredients 4 thin slices of cheese (for sandwiches) 4 slices bread 4-5 tbsp. Butter 1 green pepper (Capsicum) 1 tsp. mustard powder Juice of 1 lemon or 1 tsp. White vinegar 4 tbsp. thick mayonnaise Freshly ground black pepper to taste
Method
Whisk the butter with mustard and fresh lemon juice or vinegar and spread on each bread slice. Place a slice of cheese on this. Cut thin rings of the pepper and arrange on the slices. Top each with a piping (using a icing bag/syringe) of thick mayonnaise. Add a dash of black pepper powder. To add colour to this you may spoon in little tomato ketchup on top of mayonnaise.
Sliced plain bread with herbal spread
Ingredients 4 slices bread ½ cup grated cottage cheese 6 tbsp. Milk ½ bunch finely chopped spring onion Salt to taste 2 tsp. Finely chopped garlic 2 tbsp. finely chopped parsley 4-5 tbsp. Butter Freshly ground black pepper to taste Juice of ½ lemon (optional)
Method Mix together the grated cottage cheese with the milk and the rest of the ingredients except butter to a smooth paste. Spread this paste on buttered slices of bread. You can use a garnish of tomato along with cucumber slices topping with a sprig of parsley. Glazed halved cherries can also be used as garnish.
Egg and Mushroom toasts
Method Mix 2 tsp. Mustard powder with little water to form a smooth paste. Leave this for 10 minutes to get the pungent taste and special flavour of mustard. Whisk the eggs with 1 tbsp. water and a pinch of salt. Heat 2 tbsp. butter in a pan and slightly brown each bread slice on one side. Arrange the toasts on a serving plate with the brown side up. In the same pan heat the remaining butter and cook the egg mixture on a medium flame, stirring constantly, until lightly set. Spread the toasts with the mustard sauce then spoon on the egg mixture. Top with mushroom and garnish with grated cheese and freshly ground black pepper. Variation Instead of using plain bread, slices of garlic bread, brown bread or bread with herbs may be used.
Method Mash the tuna with mayonnaise and mix until smooth. Finely chop the herbs and mix into the tuna mixture. Beat the egg yolks. Toast the bread slices slightly. Spread the tuna mixture on to the toast. Sprinkle with cheese and dot with butter. Place under a moderate grill until the cheese melts.
