Ingredients: Any Fish (should serve five people) Red chilly Powder- 3 tbsp Haldi or turmeric- ½ tsp Tamarind syrup- 1/2 Cup 1/4th of one coconut Coriander- 1/2 a bunch Garlic- 6 pods Ginger- 1/2 inch Oil- 4 tbsp Salt to taste
Method: 1. Grind ginger and garlic together. 2. Grind coconut and most of the coriander together; keep aside some for sprinkling. 3. In one plate keep the cleaned fish; pour the coconut-coriander paste, red chilly powder, haldi, tamarind syrup & salt. Mix the above ingredients apply it onto the inside out of fish thoroughly. 4. Heat oil, put ginger & garlic paste. Once this is done add the fish to the pan. 5. Add one or two cups of water and let it cook for 15 minutes. 6. Sprinkle the finely chopped coriander, for flavour.
This dish tastes delicious along with rice or even rotis made of rice flour.
Crab Wonder In Seconds
You will require Crab meat: 1 kg Butter: 3 tbsp Flour: 1 tbsp Milk: ½ cup Onion: 1 nos finely chopped Worcestershire sauce: 1 1/2 teaspoons Bread (minus the crust) cut in squares: 2 nos Mayonnaise: ½ cup Lemon juice: 1 tbsp Paprika: to sprinkle Salt and pepper as per taste
Method Heat the butter (1 tbsp) in a pan and slowly blend in the flour. Gradually add the milk and stir continuously to maintain an even consistency and avoid lumps. Cook the mix till it simmers and thickens. Now add the sauce, onion and bread, stir and remove from heat. Allow the mix to cool and fold in the mayonnaise, lemon, salt and pepper. Now heat the remaining butter and toss in the crab meat till it is half done. Now add in the cooled sauce and sprinkle paprika. Bake the crab dish till the top turns light brown. Serve hot.
Ingredients ½ kg Prawns (cleaned) 3 tsp. Red chilli powder ½ tsp. Turmeric powder 1 tsp. Coriander powder 1 tsp. Garam masala powder 1 tsp Cumin powder ½ tsp Ajwain powder 2 tsp Ginger and garlic paste 1 Lemon. Salt to taste.
Method Clean prawns and put salt and keep it aside for 10-15 minutes. After this remove the residue water. Add all the above masalas and mix it thoroughly not with spoon but with your fingers (even the ginger garlic paste and lemon juice). Now take a pan and put around 3-4 tbsp of oil and put all the prawns and fry it.
Goan fish curry
Ingredients 1 kg promfret or any other fish Grind to paste 1 grated coconut 1-heaped tsp cumin 4 dry red chillies ; ½ tsp turmeric powder
Crush together 3-4 chillies 1 larger chopped onion Ύ tamarind water (made with lime-sized ½ inch piece ginger ball of tamarind ) Salt to taste
Method Mix the masala paste and the crushed masala together in a pan and cook, adding water whenever necessary, For about 20 minutes. Then add the cleaned and cut fish to which salt has been added and stimmer till fish is cooked. Note In the case of prawns use 1 kg or ½ kg cleaned and shelled prawns.
