½ kg. Minced meat 3 medium sized onions ½ tbsp ground ginger 8-10 green chillies 1/8 tsp turmeric powder
Coriander leaves 2 fresh limes 4 tbsp ghee or oil Salt to taste
Method Slice onions, pound green chillies roughly with a little salt and keep aside. Wash mince, drain water completely, add ginger and garlic, Cook over low heat until mince is dry. Now add water, just enough to cook mince. When completely dry and the mince is cooked, add onions, pounded green chillies, turmeric powder and the ghee or oil. Cover until the onions are cooked. Sprinkle coriander. Remove from fire, squeeze lime and serve.
MINCE KABABS
Ingredients
½ kg minced meat cooked, 6 hard boiled eggs 20 mint leaves chopped Small bunch coriander leaves
2 tbsp gram flour 1 egg beaten Salt to taste Ghee
Method Mix the cooked mince meat with gram flour, egg, mint and coriander leaves. Add salt if necessary. Wrap the meat paste around the hard-boiled eggs. Heat ghee and deep fry the balls until golden brown.
MUTTON CHILLY FRY
Ingredients
½ kg boneless mutton ½ kg onions 2 tomatoes chopped ½ kg ghee 12 green chillies 2 piece ginger ½ pod garlic 4 large cardamoms 4 cloves
1 piece cinnamon 1 tsp shahjeera 8 peppercorns 2 tsp red chilly powder 1tsp turmeric powder Coriander leaves for garnishing 1 sour lime Salt to taste
Method Grind to paste green chillies, ginger, garlic , cardamoms, cloves, cinnamon, shajeera, peppercorns. Cut the mutton into small pieces, wash and drain out the water. In a little ghee, fry the meat. When the water dries add red chilly powder , ½ teaspoon turmeric powder and salt to taste. Fry well. Add enough water and allow the meat to cook till tender and dry. Pound the meat pieces. Cut the onions finely. .In other container add the remaining ghee and sautι half the sliced onions, add the ground masala, ½ tsp turmeric powder and fry well. Reduce the heat. Add the pounded meat, remaining onions and tomatoes. Cover and cook on slow heat. Keep on stirring occasionally. When the onions are cooked and the meat turns reddish, remove from fire. Garnish with coriander leaves. Sprinkle lemon juice before serving.
PRAWN CUTLETS
Ingredients
1 cup cooked prawns (mashed to paste) ½ cup grated coconut 6 green chillies 1 small bunch coriander leaves
A clove of garlic 1 tsp cumin seed Little turmeric powder
Method Mix all the ingredients; add salt to taste and form into flat cutlets. Dip in beaten egg, roll in breadcrumbs and fry.
Method Wash and boil the meat for 15 minutes with 2 tbsp salt . Cut into small pieces and fry well and keep aside . Finely chop the onions ,4 green chillies, garlic and piece of ginger.
Heat the oil and fry the chopped ingredients for a few minutes. Keep aside. Grind all the chopped masala with vinegar and fry with the chopped masala. Add the fried pork into the mixture together with 4 cups of water and simmer it for 15-20 minutes till well done.
1 kg pork (cubed and boiled) 6 onions 15 cloves garlic 2 inch ginger 20 red dry chillies Ύ tsp cumin seeds
½ tsp peppercorns 1 tsp turmeric 6 green chillies Salt Tamarind Vinegar to taste
Method
Slice the onions, six cloves of garlic and one-inch ginger. Grind together the red chillies, cumin seeds, peppercorns, turmeric and the remaining ginger and garlic. Fry the sliced onion, ginger, garlic. Fry the sliced onions, ginger and garlic. When brown, add the ground masala, pork and sufficient water. Add green chillies, sugar, salt, tamarind and vinegar. Cook till the gravy thickens.
Small fish -- 500 gms Onions 225 gms Turmeric a pinch Dry chillies 5 gms Mustard seeds 5 gms
Cumin seeds -- 5 gms Garlic 5-6 flakes Oil 1 tbsp Salt to taste
Method Clean and wash fish. Coat with a paste of turmeric and salt. Grind mustard seeds, cumin, garlic, half the quantity of onions and chillies to a fine paste. Chop the remaining onions. Heat oil and fry chopped onion. Add fish to the onions and fry. Add ground masala and cook with a little water. Cover the fish and cook till tender.
