A Traditional Recipe For Moong Sprouts
Tips4me subscriber and culinary expert Ramya Rajagopal from Ghatkopar, Mumbai has sent us this nutritious `Green moong (bean) sprouts’ recipe:
Ingredients
•Moong - 100gm sprouted moong (read instructions for sprouting) • Salt -1tsp •Haldi -1/4tsp • Chilly powder -1tsp • Onion -1 big or 2 small ones sliced thin • Garlic or lasun -1/2 pods • Ginger/adrak -1 inch piece • Tomatoes -1 big • Oil -2tbsp
To Sprout The Moong
• Soak the moong for 5 to 6 hours in enough water. • Then drain the water and cover it with a lid and store in a warm place overnight. • Alternatively you could keep it in a casserole overnight. Or tie it in a muslin cloth and use it. • In winter it takes longer time to sprout and in summer less time.
Method
• Cook the sprouted moong in little water with salt and haldi. • Cut the onions and tomatoes into thin strips. • Chop the garlic and ginger into fine pieces. • Heat the oil in a vessel and add the onion slices. • When they become transparent add the ginger and garlic and sauté for a minute • Then add the tomatoes. • Add the salt, chilly powder, haldi and mix it well. • Add the cooked sprouts and boil for a few minutes.
And there you get delicious and nutritious sprouts. Best had with chapathis (Indian bread)
